1 Cucumber, thinly sliced and unpeeled
1/2 C. Sliced Onion
1/3 C. Seasoned Gourmet Rice Vinegar
1/4 tsp. Pepper
Mix all ingredients. Serve immediately or let stand in refrigerator for 2-3 hours. Serve with slotted spoon or drain before serving.
