Pocket Sandwich Bento (#93)

Poor kidlet picked up a bit of a sunburn yesterday.  He’s never burned before, although I guess I shouldn’t be shocked since I forgot his sunscreen.  He has always had very sensitive skin (he’s the kid that couldn’t be in a wet diaper for 3 seconds without getting a rash), and with the weather the way it has been all spring and summer, he had no chance to pick up a little base tan before spending four+ hours running around in a shade-free field.

Egg salad sandwich — I used the new pocket sandwich maker, but it was too big and I had to halve it.  Dragonfruit (white flesh this time – cutting into dragonfruit is like opening a treasure chest.  Will it be white?  Red?  Pink? ;) )  and watermelon flowers, baby corn.  Small side car (not shown) with a few chocolate filled biscuits with cute little koalas printed on them.

It could have used a little orange or something on the sandwich, but it was really a fat one and already going to be all the way to the lid so there was no room even for a little carrot flower or something like that.

    Sorry to hear about kidlets sunburn but the box looks so yummy! I have never tried dragonfrut but it sounds, and looks interesting!

    Awww… poor little guy! I’ve never let my boy go under the sun coz he has very sensitive eyes that any bright sun will disturb him and he will scream like a crazy boy!

    If you wanna know if it is a white or red dragon fruit:

    White species – usually smaller in size, longish and with longer ‘scales’ on the skin

    Red species – bigger and rounder with shorter scales

    I’m so impressed that you put dragon fruit in the bento box considering that it’s a pretty unique fruit and I know how squeamish kids can be with new foods! Getting kids involved in the kitchen can help them get used to new foods because it empowers them to think about what they’re eating and how much of it.     Your pocket sarnies look lush! My pocket sandwiches always split across the top. It doesn’t matter how little filling I put in or how fresh the bread is. What am I doing wrong????

    I find that they only work when I use not very healthy bread, really soft and springy, nothing coarse or textured, 0 fiber white bread. Like “Wonder Bread” here in the US, although iirc you are in the UK, so I’m not sure what your bread selection is like. However, given the shelf life of wonder bread, it wouldn’t suprise me a bit if it were sold world wide!

    Although I am using a bread from a locally owned regional bakery that makes a “Whole Grain White” that has some fiber and still somehow manages that really smooth silky texture that works well for pocket sandwiches. I haven’t tried to consider if this miraculous fake fiber bread is really healthier or not; I just like to assume that it is ;)
